White Chocolate Glazed Pumpkin Protein Donuts

High protein, high fiber baked pumpkin donuts with glazed in white chocolate!

Ingredients:

Pumpkin Donuts:
-1/2c canned pumpkin puree
-2 tbsp wheat or oat flour
-2 tbsp coconut flour
-1 scoop whey protein powder
-1 tsp pumpkin pie spice
-1/4 tsp cinnamon
-1/4 tsp baking powder
-stevia/sweetener
-1/4c egg whites

White Chocolate Glaze
-1 white chocolate ghirardelli square
-1 tsp coconut oil

Instructions:
-mix the ingredients for the donuts and bake in a donut pan or microwave them in a donut shaped silicone mold or prepare them in a donut maker
-melt the chocolate and coconut oil using double boiler method or microwave in 15 second intervals stopping to stir in between
-dip the donuts into the chocolate
-let cool and glaze to harden
-enjoy!

M&M Protein Fudge Blondies

High protein, high fiber super moist blondies with colorful m&m chocolates!

Ingredients:
-1 scoop casein protein powder
-2 tbsp rice protein powder
-2 coconut flour
-1 tbsp corn starch
-1 tsp pysillum husk
-1/4 tsp baking powder
-1 tbsp smart balance or butter
-1 tsp vanilla extract
– butter flavored Capella drops(optional)
-stevia/sweetener
-3g(1 tsp) agar agar (or 3x’s amount gelatin)
-1c almond milk(or any type of milk)
-water(as needed)
-m&m chocolates

Instructions:
-combine the following ingredients(except agar and milk) in a bowl, set aside
-boil milk/microwave(2min) then whisk in agar agar
-boil/microwave(2min) again
-pour in with the other ingredients and mix until well combined
-add water to thin out the batter(if necessary)
-fold in m&m chocolates
-pour into a lined baking pan
-bake at 375 degrees for 15-20 minutes(they will be still very gooey and soft but that’s okay)
-let cool completely in the fridge to allow them to firm up
-enjoy!

Peanut Butter Protein Cake Bars

high protein, high fiber super moist, dense peanut butter cake bars

Ingredients:
-1/2c peanut flour
-1/4c oat bran or rolled oats
-stevia/sweetener
-peanut butter flavored Capella drops(optional)
-3g(1 tsp) agar agar (or 3x’s amount gelatin)
-2c water
-mini chocolate peanut butter cups(I used trader joe’s brand)

Instructions:
-combine the following ingredient(except agar, water, and peanut butter cups)in a bowl
-boil water/microwave(2min) then whisk in agar agar
-boil/microwave(2min) again
-pour in with the other ingredients and mix until well combined
-fold in peanut butter cups
-pour into a lined pan and bake at 375 degrees for 15-20 minutes
-let cool, cut and enjoy!

3 minute Frosted Pumpkin Protein Cookies

High protein, high fiber pumpkin cookies with thick,creamy frosting

Ingredients:

Pumpkin Cookies:
-1/2c canned pumpkin puree
-2 tbsp coconut flour
-2 tbsp rice bran
-2 tbsp oat flour
-1/4 tsp pumpkin pie spice
-1/4 tsp cinnamon
-1/4 tsp baking powder
-1 tbsp smart balance or butter
-stevia/sweetener
-1/4c egg whites
-water(as needed)

Frosting:
-1 scoop casein protein powder
-water(as needed)
-stevia/sweetener

Instructions:
-mix ingredient for the frosting and place in the freezer(15-20min) to thicken up or overnight in the fridge
-mix ingredients for the cookies and pour into small, greased dish/bowl with raised edges
-microwave for 2-3 minutes
-spread on frosting
-enjoy!

Peanut Butter Cream Filled Sweet Buns

High protein, high fiber sweet steamed buns filled with creamy peanut filling

Ingredients:

Sweet buns:
-1/4c wheat or oat flour
-2 tbsp rice bran
-2 coconut flour
-2 tbsp pea protein flour
-1 tsp pysillum husk
-1/4 tsp baking powder
-1/4c egg whites
-stevia/sweetener
-water(as needed)

Peanut Butter Cream Filling:
-2 tbsp peanut flour
-1/4 scoop casein protein powder
-1 tsp coconut oil(optional for extra creaminess)
-peanut butter Capella flavoring drops(optional)
-stevia/sweetener
-water(as needed)

Instructions:
-mix ingredients for the peanut filling and place in the freezer(10-15 minutes) to thicken up, or over night in the fridge
-mix ingredients for the sweet buns and pour some(save some to cover the filling) of the batter small into greased bowls to place into the steamer(or into muffin tray cups if baking)
-scoop some filling on top of the sweet bun batter
-use the remaining of the batter to cover the fillings
-bring the water to a boil in your steamer and place bowls inside
-steam for 20-25 minutes(or bake)
-carefully remove and enjoy!

Dense Fudgy Protein Brownies

High protein, high fiber super moist, dense, fudgy, eggless, gluten free, … The secret? Agar agar!

Ingredients:
-1 scoop chocolate casein protein powder
-1/4c peanut flour
-1/4c cocoa powder
-1 tbsp corn starch
-double chocolate Capella flavoring drops(or other chocolate flavoring)
-1/4 tsp baking powder
-1/8 tsp guar gum(optional)
-1/8 tsp xanthan gum(optional)
-stevia/sweetener
-3g(1 tsp) agar agar or 3x’s amount gelatin)
-1c almond milk(or any type of milk)
-water(as needed)

Instructions:
-combine all the following ingredients together(except agar and milk) into a bowl
-boil milk/microwave(2min) then whisk in agar agar
– boil/microwave(2min) again
-pour into the bowl with all the other ingredients and mix until well combined
-stir in enough water to form a smooth batter
-pour into a lined baking pan
-bake at 375 degrees for 15-20 minutes(or until it starts pulling away from the sides)
-enjoy!

3 minute Chestnut Filled Protein Hotcakes

High protein, high fiber Hotcakes with sweet chestnut filling

Ingredients:

Hotcakes:
-2 tbsp pea protein powder
-2 tbsp rice protein powder
-2 tbsp coconut flour
-2 tbsp ground flaxseed
-1/4 tsp baking powder
-1/4c egg whites
-stevia/sweetener
-water(as needed)

Chestnut filling:
-1/2c roasted chestnuts
-stevia/sweetener
-1 tsp coconut oil(optional)
-1/2 tsp imitation hazelnut extract(optional)

Instructions:
-mix ingredients for the hotcakes, set aside
-place ingredients for the hotcakes and blend until smooth
-pour some of the hotcakes batter into the bottom of a greased small dish/bowl
-scoop some of the chestnut filling on top
-pour some more hotcakes batter on top to cover the the filling
-microwave for 3-4 minutes
-repeat as necessary
-enjoy!

No Bake Peppermint Chocolate Fudge

Ingredients:

Chocolate Fudge:
-1/2 chocolate bar with cocoa nibs(I used Amberlyn sugar free dark chocolate cocoa nibs bar)
-1/4c cocoa powder
-1/2 scoop casein protein powder
-stevia/sweetener
-3g(1 tsp) agar agar(or 3x’s amount gelatin)
-1c almond milk

Peppermint Frosting
-1 scoop casein protein powder
-1/2 tsp peppermint extract
-1/4 tsp konjac or guar/xanthan gum
-stevia/sweetener
-water(as needed)
-crushed peppermint candy/candy canes

Instructions:
-melt the chocolate in the microwave in 15 second intervals(stopping to stir in between) or use double broiler method
-mix in the other ingredients for the fudge(except agar and milk)
-boil milk/microwave(2min) then whisk in agar agar
– boil/microwave(2min) again
-pour into the chocolate fudge mixture and mix thoroughly
-pour into a lined pan/container
-place ingredients for the frosting(except crushed candy) into a large bowl
-beat with an electric mixer until stiff peaks form
-spread over chocolate fudge
-sprinkle with crushed peppermint candy
-let chill and firm up in the fridge
-enjoy!

Peanut Butter Jelly White Chocolate Protein Truffles

High protein, high fiber white chocolate truffles with a chewy peanut butter cookie dough wrapped around a jelly center!

Ingredients:

Peanut Butter Cookie Dough:
-1/2c peanut flour
-2 tbsp pea protein flour
-1 tsp LorAnn peanut butter flavoring (optional)
-stevia/sweetener
-water (as needed)

Jelly center:
-1/2c water
-3g(1 tsp)agar agar or 3x’s amount gelatin
-1 tsp imitation strawberry or grape extract
-1/2 pkt Duncan Hines strawberry shortcake flavored frosting creations mix
-stevia/sweetener

Coating:
-1/2 white chocolate bar(I used amberlyn sugar free) or other white chocolates
-1 tsp coconut oil(optional for easier handling) or more white chocolate

Instructions:
-boil water microwave(2min) then whisk in agar agar
– boil/microwave(2min) again
-mix in strawberry/grape flavoring and sweetener
-pour into a lined pan/container
-let chill in the fridge to firm up
-once firmed up cut into small cubes(size depending on how big you want your truffles)
-mix ingredients for the peanut cookie dough, while adding just enough water so it comes together into a stiff dough
-divide the dough into equal sized pieces
-flatten the dough into disks and place a piece of the prepared jelly into the center
-roll/pinch together the dough around the jelly into a ball
-repeat as necessary with the rest of the dough
-melt white chocolate in the microwave, in 15 second intervals while stopping to stir in between(or use double boiler method)
-roll the dough balls into the chocolate
-place then in the fridge to allow the chocolate the harden
-enjoy!

No Bake Peanut Fudge Oat Protein Squares

Ingredients:

Oat squares base:
-1/3c rolled oats
-1/4c cocoa
-1 tbsp pysillum husk
-stevia/sweetener
-water(as needed)

Peanut butter layer:
-1.5c water
-3g(1 tsp) agar agar(or 3x’s amount gelatin)
-1/4c peanut flour
-2 tbsp pea protein powder
-stevia/sweetener
-chocolate chips

Instructions:
-mix ingredients for the oat base(pysillum husk and oats will absorb a large amount of water)
-spread into the bottom of a lined pan/container
-boil water microwave(2min) then whisk in agar agar
– boil/microwave(2min) again
-mix in the peanut flour, pea protein powder, and sweetener
-pour over oat base
-sprinkle chocolate chips over it
-let chill in the fridge to firm up
-enjoy!
